is a fisherman in Eskifjordur, a small village on the Northeast coast of Iceland.

"Our waters are pristine—there is no pollution, no farm run-off like pesticides or other chemicals—this is our main livelihood and we protect it..."


FOOD FACTS
The Vikings settled Iceland 1100 years ago and brought sheep to the Island. Today's sheep are direct descendants of those same sheep. Now, Iceland has a population of around 200,000 people - and is home to more than 400,000 free roaming sheep. The cold, clean waters of Iceland sustain an abundant supply of fish that many consider to be the purest in the world.

SEASONALITY
In the summer, sheep graze freely in the mountains—eating all sorts of grass, herbs, and flowering plants. They are a true range, spring lamb.

SUSTAINABILITY/LOCAL FLAVOR
Iceland is considered 100% sustainable. Pesticides and fertilizers are banned in Iceland.

SCIENTIFIC SOUP
The scientific name for Atlantic Cod is Gadus Morphua.

FOOD HISTORY
Iceland has depended upon its cod fishery as the main staple for over 1100 years.
